Here is how to make Tofu Sour Cream:
1 box Mori Nu Tofu (about 12 oz if you're using a different brand)
1/4 c Canola Oil
3 Tbsp lemon juice
1 tsp sugar
1/2 tsp salt
Place all ingredients in a blender for a few minutes until very smooth. Voila!
Now, this is a fairly decent substitute if you just can't have sour cream (or can't possibly get it anywhere). But, I must warn you, it's not something I'd ever put on a baked potato. However, it's absolutely delicious in soups (Black bean soup, taco soup, anything Mexican-y...perhaps chili, too?) It's also really useful in quick bread recipes. I have a recipe for Sour Cream Banana bread, and my all time favorite Sour Cream Apple Spice cake. The tofu sour cream makes the cake/bread SUPER moist and incredibly yummy!!!! And, no one knows it's there! :))

Thanks for the recipe....and thanks for the heads up on the baked potato. I can see how it can help with baked goods. I've been using Okara (ground up soybeans) in my bread recipe and it really makes it moist, plus increases the fiber and protein content.
I've never been able to figure out what to do with all that junk left over... I give it to my housekeeper and she uses it in soup.
